We know you can't get enough of them - so we asked a few of our "more talented" Home Office teammates to share their favorite, family and friend-tested, summertime recipes. We'll be sharing them to you every Monday from now through Labor Day.

This week's recipe is from Keri DeKorte on our Finance Team.

"Pina Coladas were one of my favorite beverages before I became a mom. But when I had my daughter, Mya, I had to find a family-friendly alternative. She shares all my food (nothing's sacred). I like this recipe because it's light and refreshing, quick and easy to make. Best of all - you don't need to turn on the oven in the heat of summer. I hope you like it."

Pina Colada Trifle

1 Butter Pound Cake from your local bakery (cubed)
1 Large Tub Whipped Topping
2 Packets of DCD Coconut Chip Smoothie Mix
1 Packet of DCD Mango Dessert Sauce
Pineapple Cubed

Preparation
1. Mix the 2 packets of smoothie mix into the whipped topping and set aside
2. Cut the pineapple into small bite size chunks
3. Cube the entire butter pound cake
4. Mix the dessert sauce powder with ½ cup of water in the squeeze bottle
5. In a clear bowl, layer the bottom with pound cake, drizzle the mango sauce over the pound cake, add a layer of pineapple chunks, top with the coconut chip whipped topping, repeat a 2nd layer of each. On the last layer of whipped topping add some pineapple chunks and drizzle with mango sauce.







Pina Colada Shortcake

1. Prepare all the ingredients the same as above.

2. On a plate, place a 1/2 inch slice of pound cake, drizzle with the mango sauce, pile on the pineapple chunks, top with the coconut whipped topping and then drizzsle with mango sauce.
